Easy Salmon Salad

This is one of my go to lunch faves, clean and simple.

Ingredients                                                                  Utensils

  • 1- 6 oz Salmon fillet

  • 2.5 cups fresh spinach

  • 1/2 of a small red potato

  • 1 cup of green beans

  • 2 tbs olive oil

  • 2 tbs of honey

  • 2 tbs spicy mustard

  • salt and pepper

  • baking sheet

  • mixing bowl

  • sauce pan

  • cutting board

  • knife

 

Preheat over to 350, lightly sprinkle your salmon fillet with salt and pepper and bake for 15-20 minutes. Wash your potato and green beans, cut them into small cubes/pieces and boil until soft (not mashed soft, but soft). In your mixing bowl, add the wet ingredients, and whisk until well mixed. Add in your fresh spinach and toss, making sure the dressing is absorbed by the spinach leaves. Once your salmon is cooked, pull aside and flake into small pieces and add to your mixing bowl along with your cooked potato cubes and green beans. Toss one more time so that all ingredients are well mixed and enjoy!
